Just some of the quality seasonal produce that I am able to work with in France. Beautiful corn fed chickens, fresh mackerel, heirloom tomatoes. It’s great to get celery with all the leaf! When I had my restaurant in Brasil it always came in like this.Great for salsa & pestos

If you were in #Bordeaux for the Romania game then chances are you came across these little golden brown beauties called “Canelé”. They are the city's iconic pastry, with a crusty outside & a soft interior. These cakes combine flour, milk, eggs, sugar, butter, vanilla, and rum.

I want to say a big thank you to the Château Belmont The Crest Collection team for all the support over the past 6 weeks in Tours. Celebrating the 4th of July with a USA-themed pre-fuel snack for the Sevens squads today: Kansas-style BBQ 16-hour slow-cooked pork shoulder, with reduced-fat mac & cheese made with Parmesan, and topped with purple slaw. A fun snack to get the carbs in before a big days training.
