Brewing a very old Edinburgh stock ale today. Recipe courtesy of Ron Pattinson - for an upcoming Scottish historical beers event.

This blend contains at least 20 strains of brett, dregs from lambic, natural wines & sourdough. QC test on a homebrew lambic fermenting now.

This "mountain wall" separates Sunnmøre from Romsdal. South: raw ale, male brewers. North: boiled mash, female brewers.

Bratwurst & Sourkraut - Lichtenhainer. Beechwood smoked malt and soured in primary.. Fermented with WLP644 - wild sacch from Belgium.

Going into the recipe books via Ron Pattinson to make a beefed up William Younger DBS stout from 1851. Lots of brown and black malt. The wort is tasting lush.
