Having not made fresh pasta in what feels like forever, it was a real joy to dust off my pasta extruder and crank out some casarecce this morning. Served in Marcella Hazan's buttery tomato sauce, with roasted garlic, aubergine and mozzarella - so simple and delicious!

These are "corzetti della valpolcevera", a shape I've been meaning to make ever since reading @pastasocialclub 's post about them on Insta. Aren't they cute?! Really fun to make too, and absurdly easy; great shape for anyone thinking of trying pasta-making for the first time.

Last night's pad kra prow with tofu from the brilliant cookbook from Rosa's Thai Cafe - this was so quick and absolutely delicious. Although, I've always prided myself on my ability to handle hot chillies and this pushed me to the very edge of my comfort zone!

I had some unleavened dough leftover from recipe testing this morning, so rolled it out thin, brushed all over with veg oil, rolled it up and coiled it tightly, then rolled it out again, as you would for a scallion pancake. Pan-fried, garlic butter, coriander, flaky salt, YUM.

Homity pie, aka, carbs in carbs with cheese. Potatoes, loads of shallots, garlic, thyme, double cream and extra mature cheddar, layered up and baked until golden and bubbling in a buttery pastry case. Really regretting not having saved a slice for lunch today...

I made this pear and almond galette over the weekend, and if I may say so myself, it was so good! Flaky pastry, frangipane and pear, baked until crisp and golden, then brushed all over with caramel, topped with roasted almonds, vanilla ice cream and hot chocolate sauce.🍐

Had a load of roasted pumpkin, beetroot & carrot left over, so chucked them into a frittata with sauteed onion and garlic, eggs, double cream, lots of chopped parsley and plenty of seasoning. It's not often that a fridge clearing exercise is quite so pretty and delicious!

I made Turkish eggs for lunch, which are always delicious, but today I used ROOTEDspices "House Blend" to make the chilli butter, and it took them to the next level! It's a blend of Aleppo chilli, Urfa chilli, and sumac. The spices are so potent, it's an absolute flavour bomb.
