Sourdough:
1. Expensive compared with other breads
2. Goes off quick
3. Has a taste you have to work harder at to find enjoyable (I’ve done the work)

When we can overcome these things then long-lasting, “UPF” breads will be no more.

Same for most non-“UPF” foods

Why do we get stuck in A&E?
The 3⃣🔑 reasons:
☑️ A&E is an incredibly strong brand
☑️ We can't see the rest of the UEC system, as the vast majority of performance metrics are collected in A&E
☑️ We focus on short term 🔥fights, rather than investing in longterm solutions
