This week's Rachel Roddy Rice salad with red peppers, celery, herbs & egg theguardian.com/food/2025/jul/… Definitely a great rice salad. Lovely blend of flavours & tasty vegetables- I even managed to find preserved red peppers! We had ours fridge-cold with ice cream for afters. Delicious!

Had a great time exploring more of the LOROS Hospice Wild in Art #StompRoundLeicester elephant trail 🐘 with John Kilcoyne. Found 18 of the 40 big elephants plus 57 of the small ones today. Looking forward to returning for more elephants soon!

Had a lovely walk on the Canal & River Trust #ShropshireUnionCanal from Gnosall to just above Wheaton Aston with John Kilcoyne. Lots of rural views, cast iron distance markers, loads of moving boats, graceful bridges & #CowleyTunnel on the way, Came back via Church Eaton.

This week's Rachel Roddy Lasagne with Sardinian pane carasau theguardian.com/food/2025/jul/… Improvised with tortilla instead of Pane carasau - turned out great. Tasty and "sturdy enough to maintain form, but pliable enough to be cut". Had it for dinner with a green salad.

Had a great time exploring the Shrewsbury Heritage Trail with John Kilcoyne. Lots of really interesting history about the medieval town and a variety of lovely buildings from different eras. We also enjoyed the beautiful Quarry Park gardens.

Had a great time volunteering with John Kilcoyne at the Huncote Harriers AC Joy Cann 5 mile road race this evening. Really enjoyed cheering everyone on the route. Congratulations to all participants!
