USDA Prime brisket from Creekstone Farms via Tom Hixson of Smithfield. Best brisket I have had in the UK, hands down.

Locally sourced pork shoulder from New Street butchers, smoked over oak. Simple mustard binder, garlic powder, black pepper and kosher salt.
