Picked up some lovely beef shin from @harkersfarmshop made a birria with Dutch oven underneath catching all of the juices. Smoked over the top for a couple of hrs before adding to the liquid and braising for 4 hrs. A delightful Mexican feast all done on the Masterbuilt kamado!
