I saw a bunch of BBQ joint signs today, but this was my favorite. They hastily painted over an old sign from the produce stand they replaced. Can you read what is used to say under the BBQ Brisket part? It made me laugh.

We found our favorite cut of whole hog. The "rib cut" at Hite's BBQ. Cut from the middle of the hog with ribs, middlins, and the crispy skin all in one glorious cut.

Just left the Lower Rio Grande Valley, and the area’s BBQ credibility is quickly rising since my last real tour through there two years ago. Behold the Peacemaker at GW's BBQ Catering Co in San Juan which opened last year. Pork loin, pimento cheese, bacon, and candied jalapeños.
