One of my favourite dishes is maghmour. It can be made with eggplant or zucchini, it's easy to make, fast, filling, delicious and naturally vegan.

Was craving some vegetarian-friendly cold Lebanese dishes, so I made maghmour, loubieh bzeit and some tabbouleh to fight back the heat

Maghmour. I’m breaking the rules and eating it hot with rice instead of cold. Good either way though

I don’t usually have white rice, but I found this in my pantry today and wanted to get rid of it. I think my mom left it here.

Made maghmour with white rice with some backyard eggplant!

Forgot to take a pic of the full meal but we had maghmour (baby eggplant stewed in spiced tomato sauce and chickpeas) with rice pilaf and spinach fatayer.
