Great basic idea. Take recipes like this and play. For example, use a cup of fat-free Greek yogurt instead of the whole milk to bump up protein and reduce saturated fat. Add a couple cups of minced frozen broccoli to increase fiber and nutrients. thekitchn.com/trader-joes-ch…

I’m loving the different legume-based pastas out there. This one is a chickpea fettuccine. Seasoned with olive oil, salt and pepper, and nutritional yeast, then topped it for fun with crumbled spicy kale chips. So good! Think outside the box to get your vegetables and protein.

One of my absolute favorite snacks, edamame that has been sautéed for at least 20 to 30 minutes in a little water, sesame oil, and salt. Drain any water at the end, top with another dash of oil and enjoy. Excellent finger food.

Whatcha gonna munch on today? I take time once or twice a week to fully prep some raw veggies. It’s easy to get a serving or two if they’re right at my fingertips throughout the day. This week I’ve got easy homemade bean dip in the fridge for dipping. Adds protein and fiber.

I made an easy veggie roast last night and used Everything Bagel Seasoning. Turned out awesome! (Roasted baby carrots are like candy 🥰🥰 - a favorite way to get a few vegetable servings easily.)

Excellent info. Walnuts are so good for our brains. I like the way they mention a goal of two servings per week. Setting goals like that for healthy foods allows you to grocery shop accordingly and pump up the power in your diet. verywellhealth.com/walnut-consump…

A new favorite! High-fiber, good protein… Excellent flavor and very satisfying. (Found them in a truck stop on the road, ha ha, I will have to find a local source.) Reminds me to make my own, which is easy. Google it and go for it with any favorite flavors.

Almost as good as taco night: The night after! I made nachos, the hubs made tostadas. We make a TVP/black bean/taco seasoning blend for our protein topping. The Bitchin sauce from Costco is amazing on any of these meals. DeLish!
