Hi Dari Van Glam when Chef Rafael Lopez and I created the dish we wanted to created a fusion of his Puerto Rican and my South East Asian roots. We decided to use edamame beans in place of pigeon peas. We made a sofrito base with chili garlic. We cooked the rice in coconut milk.
