Looking forward to judging the Craft Guild of Chefs Graduate Awards Pastry Semi-Final at West Herts College today. Tasks include plant-based chocolate truffles, chocolate verrines alongside sweet and savoury choux buns - it’s going to be a tasty day for me and the judges! #CGCGradAwards


This year’s menu has been created by John Williams of The Ritz London, who has created a starter of tomato elixir, a main of Suffolk lamb with Roscoff onion and mint, and a dessert of English strawberries and vanilla cream #Cateys2023
