There was something weirdly supernatural about today evening. It was as if all the weather gods joined forces to provide me with the conditions I wanted but at a completely new location on my final day here. I genuinely had the time of my life here in Portugal over the last week.

My laptop's hard drive is dying and I have not been able to edit any of my photos for about two weeks now. Do any one of you really miss editing your pictures or just looking at the RAW files on a bigger screen? I am seriously missing it.

Small update about Life as a Cooking Student: You sometimes don't even remember or realise you have a burn on your arms until you find it the next morning. Just happened to me, and I am trying to decipher from the burn location and shape, where and when did I get it.

Life update as a cooking student: The dorsal side of your arm is more resistant to heat than your ventral side: lesson learnt after spilling around 70°C water on my left arm. Scars are memories and also lessons.

Life Update as a Cooking Student: After a 10 hour shift on a warm Saturday, I am completely kaputt (like the Germans say) but the satisfaction of being able to work at that level of coordination with the chef, is a huge dopamine release, kinda like reaching the end of a long hike

Have been staying here in Germany for 4 years and one of my most favourite things about it is how you can take your own food into movie theaters. Coming from India, where theatres sell popcorn and small bites at prices higher than the ticket rates, it sure was a welcome surprise.

Life Update of a Cooking Student: techniques look easy when your mentor does them, and you are like "oh that looks easy," and pick up the spoon, and realise damn, this is difficult. The technique looks easy coz of the dozens of hours of practice. Most relevant example: Quenelle

Tip from a Cooking Student: Never ever use a wet towel or cloth to handle something hot. The temperature increases significantly because the water in the cloth starts getting hot really fast, leading to more severe burns - speaking from personal experience.

"The excruciating pain that you feel when you sink your knife in your thumb, that pain comes from the knowledge that you are an idiot." - Anthony Bourdain. Understood the full meaning of this today, just not thumb, but forefinger. The new knife took its tribute.

Reading Kitchen Chronicles by the late Anthony Bourdain. Brilliant book with a no trimmings writing about the culinary world. Just finished the chapter "A Day in the Life" and boy oh boy, it was a rollercoaster. Can stress out any sane person. A definite must-read for everyone.
