If you're watching a running race, and one runner falls, gets up, and finishes the race slowly, and the other runner cuts across the grass in the center of the field and crosses the finish line first, which one do you send to the Olympics?

Rainy dreary gorgeous Saturday calls for creamy corn soup. Corn, vidalia onions, butter, lime juice, salt. (Cayenne pepper at the blending stage gives a wonderful backend heat). This is delicious.

Melt a stick of butter. Add two roughly sliced Vidalia onions (or any yellow onion). Slowly cook down the onions until blonde (not brown). 15 minutes or so

Cut the kernels off 8 ears of corn. Boil the cobs in 9 cups of water. Then simmer. That makes corn water/stock. Key to cut the thick soup during blending. Massive aroma and flavor.

Add corn to onions. Crank heat and sauté for five minutes. Kernels will turn a brighter yellow. Then add enough corn water to cover. Simmer for 20 minutes or so.

Blend & add decent amount of lime juice (couple tablespoons as you taste). Add pinches of salt as you taste. Add maybe a few tsp of cayenne pepper. Blend entirely it’s smooth with bubbles. The combo is a sweet yet brisk soup with a backend hint of heat. It’s a delicious dish.
