As far as ancient thinkers' influence upon theology, Aristotle often leads to Aquinas where Plato leads to Augustine. Of course, since Aristotle is a kind of Platonist, you will find Aristotle smuggling in Plato and Aristotle's acolytes unwittingly taking in Plato secondhand.
