Until the practice changes, I personally think this person has a right to be frustrated at the customer in most cases like this. The customer knows the person serving them isn’t getting paid what they deserve; yet they still chose to go to the establishment. Bad faith argument.

Happened to me recently. When I auditioned, I made some acting choices that I thought fell really flat at the time. When I was cast, they told me that I made great choices and that I was perfect for the role. I fretted for days about “screwing it up” before getting the call.
