Scotch fillet steak cooked sous vide, served with mushrooms and a blue cheese sauce. I sautéd the mushrooms in some beef fat and then added cream cheese and blue vein cheese plus the juices from the cooking bag. The red myoglobin blends with the creamy sauce to darken it.
