Great look at the 'honey process' in action as these beans are drying on raised beds. This comes after the cherries have been stripped of their skins, leaving the pulped fruit exposed to sun and airflow which allows the natural flavors time to be absorbed into the bean.

Once the cherries are harvested they're laid out and sorted as one of the first measures of quality control. Unripened or spoiled cherries are removed leaving only the best for further processing. Great pic fr Cafe Pacas in El Salvador home to a handful of new VCT offerings.

Nice closeup of these coffee beans as they're being washed through the pulper, where the skins and cherry fruit is stripped away. The amount of fruit stripped away during this step depends on what type of process (washed, natural, honey) has been chosen for the coffee.

Once all previous steps are done dried lots of raw coffee are weighed and bagged. This is what the beans look like with their thin layer of parchment skin. Storing in parchment retains needed moisture before dry milling just before export. A lot of work has gone into this pile!!
