Cakes, as well as scones, I have discovered, taste better with margarine and the National Trust Victoria Sandwich cake (from the National Trust book of baking), made with margarine, is delicious! Use butter for the butter cream filling and topping though.

We’re not enjoying Easter dose of covid (I tested +ve this morning). Turns out going to college reunions with lots of shouty people not the best way to avoid infection (who knew?). At least both vaccinated in Autumn as Pierrette on vulnerable list but no shouty mtgs for a while.
