For red wines, once the yeast has finished the fermentation process the wine is drained off and pumped into barrels to mature. What you are left with is a tank full of what we call pomace, which gets dug out by hand by our winemaking team and turned into compost. #dumolwinery

During fermentation yeast needs oxygen, so if we feel it needs more we pump the still-fermenting wine from the bottom of the tank and use this mesmerizing device to gently trickle it over the skins, stems, and seeds that are at the top of the tank. #winegrowing #dumol #california

Barreling down is one of the final steps of harvest, and here our team is doing just that with freshly fermented 2022 Estate Pinot Noir. The wine will be in barrel for 15-18 months of élevage as it goes through malolactic fermentation and evolves into a finished wine.#dumolwinery
