Mexico City Tlayudas are a totally different experience than the ones we are used to in Oaxaca. They are made with coarse cracked corn and are crispy like a tostada. This was served with roasted chiles and crumbled cheese. So delicious! @thecuriousmexican

I have used "Cotija" cheese for years but have apparently never tried the real thing! Made in the town of Cotija this cheese is aged and crystalized with a refined pastural quality. Thanks for opening my eyes to this @thecuriousmexican (now we just have to find it here!)
