They dry brined overnight in Maldon salt.

Smoked at 225F until they hit 125F, let them rest for 10 minutes then seared on cast iron in unsalted butter for 2 minutes on each side.

Extraordinary how National Grid want to erect pylons across East Anglia yet in other parts they have funds to dismantle them (we pay for both scenarios!). Why not do it right first time cheaper,greener and quicker
