Steve Howgate Wonder goes into a lovely fluff, Bradley's Seedling is slightly acidic, Golden Noble makes a nice sweet puree. All good choices - why not put in all three?! Ashmeads kernel, picked straight off the tree, cold, crisp and as much flavour as you wish for. It's not the most attractive and a tendency to go rubbery . This variety often exhibits watercore, which can be considered problematic or a highly desirable characteristic.
