We have been trialing #lemonbalm over the past few weeks. According to the research, it helps mood, cognitive function, digestion and sleep - what's not to like with that. We will perfect this over the coming weeks and add it to our produce list.

We are amazed that #microgreens have not enjoyed the success in the UK that they have in the US. We suspect this will change as their nutritional value, taste and appearance become better known. The #RedGarnetAmaranth pictured is laden with antioxidants/phytonutrients

I met with a Reg Dietitian today to discuss our microgreens. She said that I should not refer to them as superfoods as this is a misused term, deployed by quacks to promote their offerings. What we are offering is 'functional foods', no fads, just highly nutritious #Microgreens.

One of my personal favorite #microgreens is Broccoli. I find its cool, mild taste refreshing. It also contains many more times the nutrients of its full grown version when compared weight for weight, which is an added bonus.

Today's challenge is to design a cool and a spicy #microgreen salad. Unlike others, we will not be using pea shoots as the main ingredient to add weight and bulk. We will use whatever crops, in whatever proportions are most appropriate to provide the best salads we can.

We grow indoors on our 'vertical' farm in tightly controlled conditions. Temp 68 - 72 F, Humidity <50%, Light 17 hours per day. Crops are watered twice daily. Produce is chilled within 5 minutes of harvesting & delivered within 24 hours. No chemicals are used in production.

Nasturtium #microgreens are one of our longer growing crops, this photo was taken day 17. Nasturtium are spicy & sweet and look great in soups, some people make pesto or hot sauce with them. They accompany fish well and are often added as a top note to salads.

These are fantastic: Micro Leek, they taste of garlic and onion. We may be an order short tomorrow as I couldn't resist harvesting some for my pasta tonight.

We've been arguing about the pronunciation of the name of this crop. Is it Keen-wa or Qwin-oa? #Quinoa #MicroGreens are a trial crop for us, they taste fresh and mild, we are perfecting the growing of them before adding to our catalogue.

Given the current trade and social restrictions, we have scaled back production. We will now focus on configuring our new growing space in preparation for the return to more normal conditions.

After downing tools in Nov 2020, we decided to use our time to build a new growing facility. The facility is now nearing completion. It is possibly the best in the UK in terms of climate control. Growing will begin in May and we expect to have microgreens available from June.
