With 3 cats, and hubby recently being hospitalized 2wks, 30mi away, made me drop the $$$ for our 1st Litter Robot. Not even opened all the parts & the Big Guy is already using it as a man cave 🤣

In an attempt to start migrating to a more Mediterranean diet I tried a new dish from the Mediterranean Dish's website tonight. It was awesome! Served over brown rice w/ancient grains & a side of sweet corn.

This spoke to my soul today 🤣

Breakfast of champions at our favorite taco joint this morning, Los Moritas in Mesquite. All of their menu is wonderful, but we're especially fond of their tacos. Chorizo for me and Asada for hubby. Delish!

When the Big Pot comes out, we're eating the same thing for days 🤣 Luckily the hubby & I love Pozole Rojo. It turned out awesome, as always.

Thawed out some pulled pork I’d made a couple months back so we’re having pulled pork sammiches with tater salad and creamy coleslaw for dinner. Splurged on some fancy bakery buns at the Kroger too. 😋

Almost forgot our dinner last night. Pan seared sockeye with a recipe from a friend on Twitter - cheesy shaved brussels sprouts. It was all delish. Finally temps starting to come down a bit here in my corner of AZ so I'm hopefully grilling season is back soon!
