The Jelly of Quail features on The Anthology Menu - Volume 4 at The Fat Duck and was inspired by the great chef, Alain Chapel’s Jelly of Pigeon. The dish has forest flavours and aromas, not just oak resin but also the pleasantly perfumed note of oak moss and truffle butter.

Our oyster with passionfruit jelly and lavender course on Volume 4 of the Anthology Menu is a delicate balancing act of sweetness. A gadget called a refractometer helped Heston balance sugar content by measuring the ratio of the mass of sugar to the mass of water in the dish.

A new menu is landing at The Fat Duck. On Friday 24th June at 12pm (midday) we release the first tables for Anthology Menu Volume 5. Tables available for August 31st to end of September. Small number of Volume 4 tickets still available through same link for preceding dates.

What to have for breakfast is a big decision. As a kid, it left Heston torn between many choices. This led him to build a dish with traditional breakfast flavours, but also created the nostalgia of that childhood dilemma. Breakfast is served as part of Anthology Menu Volume 5.
