Apples have recently become a Christmas icon China. Exquisitely wrapped apples with images of Santa Claus etc. Apples are everywhere, they are sold everywhere from swanky shopping malls to the back of trucks at makeshift night markets. Pingguo, a homophone for “peace fruit.”

Sadly there is no surviving, contemporary Tudor recipe for Twelfth Night Cake but there are some C17 recipes that describe the sort of fruit & spice cake that was used for the occasion. A recipe that works really well can be found on page 185 in #eatingwiththetudors
