The problem with all these trendy but unremarkable bars/restaurants switching to large format ice is that the drinks aren’t cold enough going in and then there isn’t enough surface area on the ice to chill it faster than it dilutes and you end up with a drink that watery AND warm

So… I tried a new syrup recipe today. Decided I didn’t need the pectinex it called for. The end result was a series of cocktails that tasted and had the texture of amoxicillin from when you were a kid. It was kind of impressive.
