Dalmatian cuisine is characterized by the use of both pig lard AND olive oil in large quantities, sometimes in the same dish (meso ispod peke s povrćem, odojak, punjene paprike). It's not Mediterranean proper and definitely not a "butter country" like central and western Europe.
