Drying #cacaobeans: As seen in the video, a practice we apply to dry the beans is moving the cacao using wooden rakes to reduce the cacao layer on the platforms. We adjust the layer thickness according to the temperature and wind. #cacao #chocolate #darkchocolate #chocolatemaker

A thin cacao layer dries faster than a thick one. But fast-drying doesn't mean it's a good process. A good process depends on what flavor intensity we want for the beans. If it is needed for the drying process to last more, we cover the beans with a tent. #cacao #chocolate

1 | O’Payo is our #organic #cacao and comes from Waslala, a municipality in the north of Nicaragua. Our collection truck travels approximately 6 to 7 hours from our warehouse to Waslala to collect the cacao beans at the producer’s farm gate. 🍫

2 | Our #cacao production in Nicaragua is in an agroforestry system. This system means we plant our cacao in conjunction with permanent trees (trees that give shadow, including mature cacao trees) and temporary trees (Bananas, fig trees, papaya). 🌱

3 | This system has been helping the farms' soil conditions such as restoring degraded land, water conservation, and limiting the appearance of pests. Our agroforestry system also increases farmers' income opportunities as they can use the land to produce #cacao with other crops
