In Spain. Why do we lack such good seafood in the UK? Because we have lost the culture of eating it. Hence no one buys it. Hence no one sells it. Hence no one CAN buy it. Hence no culture. The idea that markets create choice is sheer nonsense. Choice derives from culture.
