I recently bought imported Italian flour. My daughter baked cookies for her friend's family with it. The mom called me to find out what gluten-free flour it was; she assumed it was gluten-free because she didn’t have any gut distress. She was shocked to hear it wasn't gluten-free

So they buy seeds genetically engineered to have more protein. Our bodies can't break down that much of it. It's not glyphosphate because they don't use it very often at
