Shoulder's been on for 7 hours at 250° but progressing slower than I had hoped. Foiled up now and catching up at 350°.

4.85# shoulder blade roast, rubbed w/ dizzy dust, 6.5 hours indirect @ 250*, then 2 hours foiled at 350*. Rest 90 mins in cooler.
