Now that I’m a busy grad student, I like to make a big pot of soup every Sunday to encourage me to eat vegetables and stop me from ordering takeout every night of the week. I thought it might be fun to start posting my recipes here. Today’s creation is Autumn Gnocchi Soup:

Sunday soup day! This week I made a New Mexican green chicken chili. The cilantro is optional, the roasted hatch green chiles are not.

I made an egg roll stew for this week and it is sooooo so good and comforting. It occurred to me after grocery shopping that fried wonton strips would be a good garnish so if you have them, use them! But alas, I did not. Happy souping!
