My fourth attempt at mastering a brisket. Bark set really nice on this one, I'm super happy with how this 13.5lb prime brisket turned out. 25-hour smoke and a 3.5 hour rest in a cooler had this brisket choice. Next go around, im doing an 8-hour rest. Any suggestions?
