The texture was the right consistency, chewy on the inside, crispy on the outside and just the right thickness, about half an inch. My first attempt was overbaked, too thin and crisp, and the shredded coconut man 😋 This is so good I'd consider putting it up Everything Baked by Lorraine Stitch

On #Gardening today We have started harvesting Edinam D. 's red beans. I'm thinking using this to make Hummus when we collect and dry them all. Yes you can use beans to make Hummus as well. Going to use some of the fresh ones for green beans as well. 😊

Ever since I learnt I could make my own Peanut Butter with just Peanuts and no added ingredients like oil, salt, sugar and all the interesting things store bought ones have, I haven't looked back. Always made mine. All you need is Groundnuts and a food processor. Delicious 😋

On #Gardening today I present to you Ghanaian fall colours? We left our Corn 🌽 to dry on the plant, to grind later. Was too busy to harvest fresh ones to cook. First try at growing corn, not a bad try for not the best soil. The plant struggled a bit, but we'll try again.😊

Butter nut squash when harvested at the right time taste like a mix of Irish and Sweet Potatoes. You can roast, fry and use them in soup. And there's the rest of our Pearl Millet.🌾 We won't be planting again until the next planting season,but we still have a few things growing.

Growing Chickpeas in Ghana is not impossible, if we can do it, you can too. Just stick them in good soil, and best to grow them in the cooler season. Safe to say, this experiment worked. 🤌🏾 If only farmers in Ghana will pick it up too...
