At this very moment I am (we are) drinking a 1995 Cave Spring Vineyard Chardonnay. For those who don’t know, from the Niagara Bench. So, 30 years old. I would have bought it around 1997/8. Delicious. Into elegant old age.

On Sept 16, Cave Spring made history. Years in the making, our team isolated yeast from our own grape skins and this week we began fermenting with them. A turning point: our sparkling wines will now be 100% Canadian, no imported yeast. Woo hoo! #niagarawine #cavespringvineyard
