10 years ago I was one month into a summer internship in @Markpost's cultured meat lab, and ~2 months away from the first ever cultured beef tasting in London. Honestly pretty emotional to hear today's news about UPSIDE Foods & GOOD Meat's USDA approval. CONGRATULATIONS!!!!!!!!!

I want to try spray-drying a protein solution, but it's expensive to test. Does anybody have good preliminary experiments to run on proteins to see if they're at all amenable to spray-drying? Trying to decrease the risk of spending the $$$ unnecessarily. Thanks!🤗
