How can Apple say (in a courtroom) that sideloading doesn’t exist without perjuring themselves?

Not only does it:

1. Exist

but

2. Is easily done by abusing Apples own developer enterprise signing system.

If apple can’t keep that locked down and secure, why stop consumers

Apple cannot honestly say it is for security. It’s not like apps could be remotely sideloaded without the user knowing.

And if an attacker had access to the device then they could use an enterprise cert they bought… or just use a laptop to side load with iTunes of all things
