The problem isn't that LLM writing uses em dashes (em dashes are awesome) but that it uses them where commas would do. Moreover, the sentences are confusing to read and edit, because LLMs format text output around the em dash: they create syntax that requires the em dash.

Diverse things can be named through the anaphora — it opens up space for parataxis. In the best case, it unites disparate things, encompassing them in the repeated phrase. In the worst case, in becomes a "junk drawer" poem.
