I venture to Bury Market in tonight’s episode of Food Stories and have a great chat with Matthew from Chadwick’s Black Pudding stall about tripe, cowheel pie (remember Desperate Dan?) and black pudding too . Which just so happens to work very nicely in my Scotch egg recipe .

John Dory with beer, bacon and cabbage features on tonight’s episode of Food Stories. I’m very fond of this simple treatment for a great fish like John Dory, which is perfectly complemented by the bitterness of the beer, the smokiness of the bacon and the lightly cooked lettuce.
