Beginning to regret this decision to cook a brisket overnight. I think hotter during the day is more my thing 😂 had cooks during the day that need next to no adjustments at all but this cook is not cooperating

Photographs of the brisket from Chris Hayman Butcher. Made a few mistakes that resulted in beef that was tender but not as moist as I would like. Will be better next time. I managed my first ever overnight cook. The lumpwood charcoal from @ResilientW lasted over 19hrs in the UDS.

Cider brined pork chops tonight. Didn't have the HOG recipe ingredients but did the parts I had. Not sure how much of an affect the cider brine really had but the pork was tender. Tasted good. Had similar results without the brine though. Maybe a side by side test next time.

Some pizza 👌🍕 Simply smoked scamorza mozzarella topping cooked on the Ooni 2s. I know we're good at producing fantastic meat in Wales but what about pizza toppings? Cheeses that will work on a pizza or even tomatoes. Any Welsh producers of a flour good enough for pizza?
