Photographs of the brisket from Chris Hayman Butcher. Made a few mistakes that resulted in beef that was tender but not as moist as I would like. Will be better next time. I managed my first ever overnight cook. The lumpwood charcoal from @ResilientW lasted over 19hrs in the UDS.
