Lazy lunch hour at Waterkloof. The Nguni cows form part of our regenerative farming practices. During "work hours" they will eat the top layer of grass and weeds between the vines. While grazing the vineyard, they leave plenty of potassium - rich manure and droppings behind.

BLOCK 4 MERLOT Hand picked early in the morning into picking crates. Hand sorted again in the cellar on the conveyor belt to remove any leaves. Grapes are placed into open-top wooden fermenters via gravity. Fermented starts spontaneously utilizing wild yeast present on the fruit.
