We slow cook our ox tongue long and low overnight for this dish. It's stir-fried in a hot smoky wok with a chilli and garlic paste, ramiro peppers and pak choi. Oyster sauce and white pepper whack up the smoky umami funk, fresh green peppercorns make for a spicy, aromatic kick.
