If you can, source all your deli containers from the same supplier so they will all have similar tare weights. My quarts used to all be 32 grams. Now they are all over the place. 🙁

Kill me people. There is no such thing as “uncured” bacon. Nitrites are the same if they come from a rock or if you condense a field of celery down a thimble. If it is pink, it is cured.

Ok. So about 10 years ago when Dax was 8 I did a gig at the ⁦Park Hyatt Tokyo⁩ and one of the bartenders I worked with, Isogai San, gave Dax this silver chain, which he still wears. I’d love to find and thank him. Hope I spelled his name correctly.
