While it didn’t get as hot, it worked in exactly the same way as modern air fryers do - by circulating hot air. The same way a convection oven works, just on a smaller scale.

Fun fact! The air fryer was actually patented in 1945 by William Maxson, and was called the Maxson Whirlwind oven. It was intended to heat meals for soldiers traveling by air, and reached a maximum temperature of 200f. It was eventually adopted for commercial airlines as well.
