Grill plans for the weekend. The pork chops have to be wet brined for 24hrs, which makes a Huge difference to any pork. Keeping it really juicy ( providing its cooked right) . The steak benefits from a dry brine ( overnight) if possible.

Risotto..... red peppers, mushrooms, tomatoes, parmigiano reggiaño, fennel garlic chorizo, fresh basil n oregano chicken stock 😋 👌

Wet day, so knocked up a pea,garlic, leeks, basil n pancetta soup, with pancetta wafers,onion n garlic beanballs n Greek yogurt 😋

Steak Sunday.. 😋

Hickory smoked Italian style meatballs in a bolognese sauce 😋

Wings n burgers 😋

New rub to try out... tastes n smells guuud .

Mushroom, peppers, sun-dried tomato, grana padano and smoked chorizo risotto 😋

Home made pastrami ramen... 👌😋

Thinly sliced homemade pastrami... made this one extra spicy and it tastes delicious 😋. Was thinking bout putting some of it into a pastrami ramen dish ,and a pastrami, peppers and mushroom risotto. Washed down with a tankard or three of ale 🍺.

Bolognese sauce... 4 hrs in... tastes 👍.

The make it and see what happens chicken sauce... pancetta ,onion,mushrooms, garlic, chicken stock, cream, tarragon, black pepper, chicken pieces, seasoned flour..😋👌
