The 'emulsifier' sodium citrate is associated with an increased risk of diabetes - but then sodium citrate (E331) has many different uses, for example in 'sodas' - drinks that we already know are associated with increased diabetes risk.

This is exactly the problem of publishing studies based on unreliable data. I wonder whether Eric Topol has actually read the study and taken the methodology apart to see that the study does not really estimate emulsifier intake - because it simply doesn't have the data.
