This one’s been tough to keep to ourselves. Today we launch a versatile and nuanced Single Malt Whiskey - created by The Dead Rabbit and J.J. Corry Irish Whiskey - matured in ex-bourbon casks, and finished for 12-18 months in selected Amontillado, Palo Cortado, Oloroso, and PX sherry casks.
The Parlor The Dead Rabbit has just launched a new 22 cocktail with 15 Irish products featured, with 9 of those being Independently Irish-owned.
An awesome showcase of modern Irish spirits producers in NYC. I can't wait to see the menu in person.

In the early days of Irish whiskey (pre-1900) the majority of whiskey was bottled by bonders, whiskey merchants & pub owners.
The distillery would provide custom white labels with the bottlers details on it! 1889 saw the first distillery bottling!
