Ok. Question.
I made some chopped chicken yesterday on the BBQ for my friends gathering. When I was cutting it the chicken was PERFECT. Tender juicy goodness. When I got to the BBQ it had turned pasty like mush. WHY!!?? Was it the added pineapple?
Please help me

Ethan Embry @unlsweetie I think the question has been answered: Pineapple acids broke down your chicken to mush. I ran it by my chef friend (River Twice in Philly) who also mentioned 'shitty chicken' could be a problem (not yours, for anyone reading) - I'd guess will break down faster, not hold up, etc
